Gravče na tavče

Serves 4 people
40dag of “Tetovac” beans, soak the day before
2-3 leeks, finely chopped
2-3 big green tomatoes, peeled and finely chopped
2-3 large paprika’s, cleaned and finely chopped
2 cloves of garlic
3 bay leaves

  • Few chillies
  • Cooking oil
  • Smoked meet, ribs or bacon

2-3 carrots, finely grated
Salt and paper

1. Drain the beans that you have previously soaked overnight, cook them alongside the slices of smoked meat (pork ribs, bacon, ham shoulder) until it is softens slightly, then drain juices.

note- the juices drained from this setp can be re-applied to the dish at step  6 as opposed to water for a fuller flavour

2. Stew the leeks and carrots with a touch of oil till they soften.

3.Place the leeks in the oven dish. Sprinkle with salt and pepper.

4.On the leeks place the beans, sprinkle with salt and pepper.

5.On the top of the beans place tomato and paprika, sprinkle with salt and pepper.

6.On the top add  water, so the beans soak, spice it up with green chillies, bay leaves, garlic and press in the slices of the smoked meat, bacon or ham shank.

7.Place in a preheated oven and bake on
180˚ till the water vaporises  and till the beans are nicely baked.
